Searching for advanced or cool cartographic techniques in ArcGIS

I would like to introduce students to some unusual/ advanced / cool cartographic techniques in ArcGIS (or even QGIS) before moving onto web based cartographic tools and Adobe.

I have decided to do the following.

1. Alpha channel adjustments.
2. Cartograms
3. Various hillshade / DEM representations

I remember an ESRI intern making a tool that does flow maps like this but can no longer find the link. Does anyone know it?

What I am looking for is two or three more advanced / cool methods to apply cartographic techniques in ArcGIS.

What idea and resources do you have that demonstrate some cool ArcGIS cartographic techniques?
