Purpose of including coordinates as variables into model

I have seen several applications where the coordinates of observations have been include as variables into a clustering or regression model.

What is the purpose of such procedure? Is this some way of modelling spatial heterogeneity? Or is it more related to modelling spatial dependence? Why not including a spatial lag in such case?
