Interpreting results of QGIS intepolation and Heat map from point shapefile

I have taken a step interpolation and heat map of the data point shapefile (building Centroid) with QGIS ver-2.8.1, as shown below.

My question are:


  1. What is the difference of the two methods?
  2. How to explain the results?(Interpolation and heat Map of points)
