Creating a profile graph from xyz bathymetric data

I've got a series of xyz files, representing each a series of xyz bathymetric points on the same navigation line. How I can convert them all to profiles, one for each line?There are so much files to do it with manual tools, like ArcGIS Point Profile, so I look for a batch solution. I've tried to use ArcGIS, QGIS, and FME.
