Counting sections of most often used routes using ArcGIS Network Analyst?

I am just assessing bicycle accessibility in my city and was wondering whether there was a way of finding the number of times certain segments of routes were used when doing shortest path analysis.

I was wanting to compare the difference in time and length between the least cost path and safest routes taken from each population meshblock/census tract to one destination. Finding the most popular segments of the routes used would show where potential bicycle planning may take place in the future.
